• Ribeye steak, room temperature
• Vegetable oil
• Coarse ground pepper
Preheat oven to 400 degrees
A cast iron skillet is a must for this recipe.
Heat skillet to very hot, 7 minutes or so
Brush steak with oil, season with salt and pepper.
Sear steak in skillet 2 minutes on each side. Top the steak with a pat of butter and place in oven. Cook until the internal temperature of the steak is 125 degrees for medium rare. Adjust cooking time for the desired doneness of the steak.
Transfer to a plate and cover with foil while resting for 10 minutes.
